The gentle one

Golden yellow with green highlights, a balanced extra virgin in which sweetness, bitterness and pepper all stay in the background. Almond often comes through on the nose.

This is the oil that does not cover. We use it raw on fish, on white meats, on lightly cooked vegetables and on tomatoes, where the dish itself should stay in the lead. It is also the one we suggest to anyone trying a single cultivar oil for the first time, and to children.

The bold one

Frantoiano.

Medium fruitiness, with artichoke and freshly cut grass arriving first, then almond and green tomato behind them. Bitterness and pepper are there, you notice them, and they stay in the mouth for a long time.

This is the oil for substantial food. A thread over pulse soups, over raw vegetables, over grilled meat, over warm bread. Where Leccino accompanies, Frantoiano speaks up.

In the kitchen

How we use it
every day.

There are no complicated rules: good extra virgin oil shows itself above all raw, poured at the last moment, when the dish is already on the plate.

Keep it away from light and away from the stove, and use it within the year. Oil kept well holds the aromas it had on milling day; oil forgotten on a shelf loses them in a few weeks.
